This blade is 1/16″ thick 440C.  Designed for Walter V., this is the fourth knife I’ve made for him over the years as he is a serious kitchen enthusiast!!  All different designs based on his design ideas.  The handle is stained and finished with Polymerized Tung Oil.  It looks like a varnish but it isn’t and it doesn’t chip.  As the handle wears, it’s easy to reapply the oil as needed.  A quick scuff with some steel wool will give you a satin look.
